NO BAKE PUMPKIN CHEESECAKE BITES:

WHAT YOU NEED:
• 1⁄2 Cup of Pumpkin Puree
• 1⁄4 Cup of Powdered Sugar
• 1 1⁄2 Tsp of Pumpkin Pie Spice
• 2 1⁄2 Cups of White Chocolate Chips • 6oz of Cream Cheese
• 3⁄4 Cup of Vanilla Wafer Crumbs

WHAT TO DO:
1. Melt a 1⁄2 cup of the white chocolate in a bowl (you can use the stove or a microwave).
2. While the chocolate is melting, mix the crumbs, puree, cream cheese, sugar, and spices, in a separate bowl.
3. Add the melted white chocolate to the mixture, add more sugar if needed. 4. Refrigerate the mixture for 30 minutes, or longer, depending on the consistency of the dough. You want it hard enough to form balls.
5. Place wax paper on a cookie sheet.
6. Begin making balls out of the chilled dough, about a spoonful at a time. 7. Melt the remaining white chocolate and dip the balls into the melted chocolate.
8. Refrigerate until the chocolate is hardened and serve!
